• Cold, leftover, cooked pototatoes (boiled/baked/roasted)
  • Cumin seeds
  • Chilli powder
  • Paprika
  • Salt
  • Olive oil
  • One frying pan
  • Chopping board

Easiest and tastiest way to use up leftover potatoes (or you can just boil yourself some for this). Quick and easy lunchtime snack.

Heat oil in a pan, add all the salt and spices and fry for 60 seconds. Add potatoes and fry until crispy and piping hot right through. It’s up to you how much of each spice you use – use your initiative and spice to taste but I like one heaped tsp cumin seeds and the same of paprika with a quarter tsp of chilli (and sometimes cayenne pepper if I’ve got it).

Serve with a crispy salad and a brew.
